Position Purpose
The Pastry Head Chef is responsible for managing pastry kitchen operations and ensuring the highest quality of baked goods and desserts in line with Singita’s Standard of Excellence and Standard Operating Procedures (SOPs). The role focuses on designing pastry menus, delivering exceptional guest dining experiences, maintaining strict hygiene standards, managing inventory, and training kitchen staff while supporting Singita’s sustainability and conservation goals.
Key Duties & Responsibilities

Pastry Production & Culinary Excellence:
-
Prepare high-end pastry items to Singita standards, including artisan breads, croissants, Danish pastries, ice creams, sorbets, cakes, biscuits, and plated desserts.

Design pastry menus and introduce innovative food concepts aligned with the lodge’s overall culinary vision.

Oversee food preparation to ensure high visual presentation, exceptional taste, and strict hygiene compliance.

Interact with guests effectively to understand special preferences and elevate their culinary experience.

Kitchen Operations & Cost Control:

Manage the pastry section cost-effectively within agreed budget limits.

Supervise inventory ordering, portion control, and stock rotation to prevent shortages and reduce food waste.

Ensure careful handling and maintenance of kitchen equipment to minimize breakage and damage.

Execute thorough shift handovers to communicate pending requests and operational tasks to incoming teams.

Health, Safety & Compliance:

Implement and enforce Health and Safety procedures, ensuring the pastry kitchen remains spotlessly clean and hygienic.

Identify potential workplace risks and hazards to minimize operational liability.

Team Leadership & Development:

Mentor, train, and develop kitchen staff, actively contributing to succession planning.

Maintain open communication across departments to ensure seamless lodge operations and guest satisfaction.

Conservation & Sustainability:

Align kitchen practices with lodge environmental guidelines and continuously seek ways to “green” operations.

Actively support and communicate Singita’s core conservation purpose and environmental values.

Qualifications & Requirements

Education: Certificate, Diploma, Vocational/Technical training, or Bachelor’s Degree in Culinary Arts or Pastry Specialization.

Experience: 3 to 5 years of experience in pastry operations, preferably within high-end luxury lodges or fine-dining environments.

Skills & Competencies:

Advanced skill in specialized baking, pastry craft, and dessert design.

Knowledge of food costing, inventory management, and kitchen budget controls.
-
Strong leadership, staff training, and team management capabilities.
-
High standard of hygiene, health and safety awareness, and attention to detail.

Eligibility: Tanzanian national or holds a valid working visa for Tanzania.
