Job Purpose

The Cost Controller works closely with the Food & Beverage (F&B) and Culinary teams to track, analyze, and control hotel operational costs. This role ensures proper goods receiving procedures, performs inventory reconciliations, prepares P&L statements for major banqueting events, and calculates accurate menu costing to maximize profitability while maintaining high service standards.

Key Responsibilities & Accountabilities

• Menu Costing & Pricing Strategy:

  • Prepare detailed recipe and menu costing in collaboration with the Executive Chef and suggest optimal menu selling prices.

  • Track price variations of raw ingredients and advise management on menu margin adjustments.

• Audit, Receiving & Inventory Control:

  • Perform spot-checks on the receiving of goods at the hotel to ensure strict adherence to procurement and quality control standards.

  • Conduct random inventory audits across outlets by reconciling opening and closing stocks against store issues and point-of-sale (POS) data.

  • Verify and monitor complimentary bar orders, Club Rotana F&B expenses, room fruit baskets, and VIP amenities.

• Financial Reporting & Banqueting Control:

  • Prepare daily flash reports of food costs and audit daily outlet void/cancellation sheets.

  • Attend major banquet events featuring open bars, prepare banquet revenue breakdowns, and generate event Profit & Loss (P&L) statements.

Candidate Qualifications & Experience

Educational Background:

• Bachelor’s Degree, Advanced Diploma, or Certificate in Finance, Accounting, Hospitality Management, or a related field.

Work Experience:

• Minimum of 2 years of experience in cost control, accounting, or finance, preferably within a luxury hotel or hospitality environment.

Key Competencies & Technical Skills:

• Systems Proficiency: Ability to process store inventory and merchandising data through hotel management and finance software.

• Commercial & Operational Insight: Deep understanding of hotel operations, F&B inventory cycles, and cost auditing.

• Core Strengths: Strong analytical skills, self-motivation, lateral thinking, effective communication, and results orientation.
